Mace comes from the same tree as nutmeg and prior to harvesting actually forms a lacy netting around the whole nutmeg. Once the Mace is removed the nutmeg can be sold as a spice on its own, as can the Mace.
Flavour-wise, Mace is warm and spicy, subtler yet still similar to nutmeg. Like nutmeg, Mace is used to flavour cakes and other sweets, but it is probably more widely used in savoury dishes. These include meats, sauces, curries, pickling, ketchup, and even Worcestershire sauce.
Mace is often used in place of nutmeg when the dark colour of grated or ground nutmeg would not be welcome in light creamy dishes. It works particularly well in a simple white sauce as well as, clear broths, omelettes, and mashed potatoes. Mace should be added at the beginning of the cooking process to allow its full flavour to come out in the cooking.
