Mustard was originally introduced into Europe by the Romans and today it is the Yellow Mustard Seeds that are the most commonly used variety in Western cuisine.
The brown variety is more likely to be found in an Indian recipe. Using whole mustard seeds allows you to give dishes the texture of the delicate seeds as well as their pungent, spicy flavour. Whole Mustard Seeds are fantastic when used in chutneys and pickles where their flavour and texture gives contrast to the soft texture and sweet flavour of many recipes. Alternatively mix them with honey and a touch of vinegar (just to loosen the mix) to make a rub for roast ham.
