Although Juniper is probably most widely known as the main flavour in gin, it is also an important culinary spice.
When used in cooking, Juniper gives a refreshing, sharp, piney flavour to foods and is particularly good at cutting through fatty meats such as duck or pork. It is also excellent when added to any hearty stew or casserole, rich with bacon, mushrooms and red wine, and compliments a venison dish especially well.
For an average size stew serving 4-6 people we would suggest using 3 or 4 crushed berries. Always crush the berries to release the flavour, and do not be tempted to add too many berries as the flavour can be overpowering if too many berries are used.
