White Peppercorns are produced by leaving the berries on the vine longer than is done for black pepper until they are ripe and red.
The berries are then soaked in water to soften the outer skin which is then taken off by rubbing the berries. Left in the sun to dry, the smooth berries turn a creamy white colour. White Peppercorns initially taste milder than black peppercorns, but this initial mildness is followed by the sharp, hot pepper taste that is stronger than black peppercorns.
They are used extensively in preference to black pepper in Chinese cooking and also where black pepper would spoil the appearance of creamy sauces and soups.
