Fenugreek is a very popular spice in the East, but to Western tastes it is a little bitter to be used on its own so is often used as an ingredient in spice mixes.
It is a key ingredient in many curry blends, and also adds aromatic warmth to many chutneys and pickles. To create a full flavoured spice mix, gently toast the Fenugreek Seeds with mustard seeds, coriander, cumin and cardamom and grind together.
Use the mix as a base for a curry or a rub for chicken before grilling.
