Cardamom is used widely throughout the Indian sub-continent and is probably best known in this country as an ingredient of curry.
Having said that, if you limit Cardamom to curry you will be missing out on a wonderful flavouring for deserts. A few Cardamom Pods in a rice pudding will give it a subtle flavour that will lift it to a new level, and will soften the tangy flavours of lemon and oranges when used with citrus fruit deserts. Cardamom also goes well with chocolate (especially high quality white chocolate) and is used in many Scandinavian bread recipes.
