Home baked cookies to go with the Cheese Straws in your lunch box!
Ginger ‘N’ Spice Cookies
Ingredients
4 cups plain flour
¾ teaspoon baking soda
¾ teaspoon ground ginger
1 ½ teaspoons ground cinnamon
1 ½ teaspoons ground cloves
½ teaspoon salt
1 cup unsalted butter
1 ½ cups sugar
½ cup molasses
2 medium eggs
1 teaspoon vanilla powder
Method:
1. Preheat oven to 170ºc
2. Sift flour, baking soda, spices and salt together and set aside.
3. Cream butter and sugar until fluffy.
4. Beat together molasses, eggs and vanilla, and add to butter and sugar, mix well.
5. Mix in dry ingredients a little at a time, stirring well, mix thoroughly.
6. Roll into medium sized balls, coat with flour or sugar and flatten each ball before baking for 5 minutes.
